In 1984 Sabine Bischoff was a member of the first German foil female fencing team to win gold at Olympic Games. Together with Zita-Eva Funkenhauser, Cornelia Hanisch, Christiane Weber and Ute Wessel they had a dramatic semifinal bout against Italy, coming out only one touch ahead, though they later won the final easily against Romania. Bischoff had won her first international medal at the 1979 World Championships with the foil team winning bronze, followed by a silver in 1981, another bronze in 1982 and also a silver in 1983. In 1983 and 1984 she became German National Champion with the foil. In 1985 she lost to her teammate Hanisch in the World Championship final but won the gold medal with the team. One year later the team again won a bronze medal.

She studied psychology and later German, history and social science to became a high school teacher. Her brother Stefan was also a successful foil fencer nationally. Sabine Bischoff died in March 2013 after a long, chronic disease. Her homeclub FC Tauberbischofsheim described her as "an outstanding sports personality and a role model" for fencing who helped the club reach its outstanding international level.
