José Viejo will always be known for the 11th stage of the 1976 Tour de France, which ended in Manosque. Viejo went off the front with 160 km to go and was never caught, winning the stage by 22:50, the largest winning margin in any Tour de France ever (through 2014). Viejo won a bronze medal in the 1971 World Amateur Road Race Championships, and won the 1972 Tour of Poland as an amateur. He turned professional in 1973 and quickly won a stage at the Volta a Portugal. He later had stage wins at the Ruta del Sol, Vuelta a Andalucía, Vuelta a Asturias and Vuelta al País Vasco, retiring from the peleton in 1982. During his career Viejo raced for La Casera, Super Ser, Kas, Teka, and Zor.
